Creamy Butternut Squash Gnocchi with Sausage

1 lb butternut squash, peeled & cubed
2 cups all-purpose flour
1 egg
Salt & pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan
2 cloves garlic, minced
1/4 cup butter
1 lb Italian sausage, casings removed
1 onion, chopped
1 tbsp olive oil
1/2 tsp red pepper flakes
Directions:
1. Boil squash, mash & mix with flour, egg, salt & pepper.
2. Form gnocchi, boil until they float.
3. Cook sausage with onion, garlic & pepper flakes.
4. Prepare sauce with butter, garlic, cream & Parmesan.
5. Combine gnocchi, sauce, and sausage. Garnish with parsley.
