1 cup basil pesto (store-bought or homemade)
1 cup heavy cream
1 tablespoon olive oil
2 cloves garlic, minced
½ cup grated Parmesan cheese
Salt and pepper, to taste
1 tablespoon fresh basil, chopped (optional for garnish)
1 lb pasta (penne, spaghetti, or fusilli)
Directions:
Cook the pasta according to package instructions until al dente. Drain, reserving 1/2 cup of pasta water, and set aside.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, until fragrant.
Pour in the heavy cream and bring to a simmer. Stir in the pesto and cook for 2-3 minutes, until the sauce is smooth and heated through.
Add the Parmesan cheese, salt, and pepper, stirring until the cheese is melted and the sauce thickens.
If the sauce is too thick, add a bit of reserved pasta water to reach your desired consistency.
Toss the cooked pasta in the sauce until well coated.
Garnish with fresh basil if desired and serve warm.
