Ingredients
For the Pasta:
12 oz elbow macaroni (or any short pasta)
1 tsp salt (for boiling water)
For the Cheese Sauce:
4 tbsp unsalted butter
4 tbsp all-purpose flour
3 cups whole milk
1 cup heavy cream
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp mustard powder (optional, for depth of flavor)
1/4 tsp smoked paprika (optional, for a hint of smokiness)
2 cups sharp cheddar cheese, shredded
1 cup mozzarella cheese, shredded
1/2 cup parmesan cheese, grated
For the Topping:
1/2 cup extra shredded cheese (cheddar & mozzarella mix)
1/4 cup panko breadcrumbs (optional, for crunch)
1 tbsp butter, melted
Instructions
Cook the Pasta:
Boil macaroni in salted water until al dente. Drain and set aside.
Make the Cheese Sauce:
In a large pot, melt butter over medium heat.
Whisk in flour and cook for 1-2 minutes (to remove raw flour taste).
Slowly whisk in milk and heavy cream, stirring constantly.
Add salt, pepper, garlic powder, mustard powder, and paprika.
Once thickened, remove from heat and stir in cheddar, mozzarella, and parmesan until smooth.
Combine & Bake:
Toss the cooked pasta in the cheese sauce.
Transfer to a buttered baking dish and top with extra cheese and breadcrumbs.
Drizzle with melted butter for extra crispiness.
Bake to Perfection:
Bake at 375°F (190°C) for 20-25 minutes until golden and bubbly.
Let rest for 5 minutes before serving.
