Creamy Baked Mac and Cheese

Ingredients:

For the pasta:

1 lb elbow macaroni

4 cups shredded sharp cheddar cheese

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

4 tbsp unsalted butter

1/4 cup all-purpose flour

2 1/2 cups whole milk

1 cup heavy cream

1 tsp garlic powder

1 tsp Dijon mustard (optional)
Salt and pepper to taste

1/4 tsp smoked paprika (optional)
For the topping:

1/2 cup breadcrumbs

2 tbsp melted butter

Fresh parsley, chopped (for garnish)

Instructions:

Cook the Macaroni:

Cook the elbow macaroni according to the package directions, drain, and set aside.
Make the Cheese Sauce:

In a large saucepan, melt the butter over medium heat. Add the flour and whisk to create a roux. Cook for 1-2 minutes, stirring constantly.
Slowly whisk in the milk and cream. Continue to cook, whisking constantly, until the sauce thickens (about 4-5 minutes).
Stir in the shredded cheddar, mozzarella, and Parmesan cheese until the sauce is smooth and creamy. Season with garlic powder, Dijon mustard, salt, pepper, and smoked paprika.
Combine Pasta and Sauce:

Add the cooked macaroni to the cheese sauce and stir to coat evenly.
Bake:

Preheat your oven to 350°F (175°C).
Pour the macaroni and cheese mixture into a greased baking dish. In a small bowl, combine the breadcrumbs and melted butter, then sprinkle evenly over the top of the mac and cheese.
Finish in the Oven:

Bake for 20-25 minutes or until the top is golden and bubbly.
Serve:

Garnish with fresh parsley and serve hot!
