Cranberry Turkey Meatballs with Sweet & Savory Glaze
Ingredients
For the Meatballs:
1 lb ground turkey
½ cup breadcrumbs
1 egg, lightly beaten
2 garlic cloves, minced
½ cup dried cranberries, chopped
1 tsp dried thyme
Salt & pepper, to taste
For the Glaze:
½ cup cranberry sauce (store-bought or homemade)
2 tbsp honey
1 tbsp Dijon mustard
1 tsp apple cider vinegar
Garnish:
Fresh parsley, chopped
Directions
Preheat Oven
Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Mix the Meatballs
In a large bowl, combine ground turkey, breadcrumbs, egg, garlic, chopped cranberries, thyme, salt, and pepper. Mix until just combined.
Shape & Bake
Form the mixture into 1-inch meatballs and place them on the prepared baking sheet. Bake for 18-20 minutes, or until fully cooked (internal temp 165°F/74°C).
Prepare the Glaze
While the meatballs are baking, whisk together cranberry sauce, honey, Dijon mustard, and apple cider vinegar in a small saucepan. Heat over medium-low heat until smooth and slightly thickened.
Glaze the Meatballs
Transfer baked meatballs to a serving dish and drizzle with the warm glaze. Toss gently to coat.
Garnish & Serve
Sprinkle with fresh parsley and serve as an appetizer or pair with mashed potatoes for a comforting main dish.
