2 cups all-purpose flour
1 cup granulated sugar
1 ½ tsp baking powder
½ tsp baking soda
½ tsp salt
¼ tsp ground cinnamon (optional)
¼ cup unsalted butter, melted
1 large egg
¾ cup fresh orange juice
1 tbsp orange zest
2 cups fresh cranberries
For the Glaze:
1 cup powdered sugar
2-3 tbsp fresh orange juice
½ tsp orange zest
Directions:
1. Preheat oven to 350°F. Grease and line a loaf pan.
2. Whisk together dry ingredients.
3. Mix wet ingredients, then combine with dry.
4. Fold in cranberries and bake for 60-70 mins.
