Description
For the Ricotta Gnocchi:
1 ½ cups ricotta cheese
1 cup all-purpose flour
1 egg
½ tsp salt
¼ tsp ground black pepper
Zest of 1 lemon
2 tbsp fresh basil, chopped
For the Garlic Butter Sauce:
4 tbsp unsalted butter
3 cloves garlic, minced
¼ cup grated parmesan cheese
Salt and pepper to taste
Fresh basil, chopped (for garnish)
Directions:
In a large bowl, mix ricotta cheese, egg, salt, pepper, lemon zest, and fresh basil. Gradually add the flour, stirring until the dough comes together and is
not too sticky.
Turn the dough out onto a floured surface and divide it into 4 sections. Roll each section into a long rope and cut into small gnocchi pieces.
Bring a large pot of salted water to a boil. Add the gnocchi and cook for 2-3 minutes, or until they float to the surface. Remove with a slotted spoon and set
aside.
In a large skillet, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
Stir in the cooked gnocchi and toss gently to coat in the garlic butter sauce.
Sprinkle with parmesan cheese, season with salt and pepper to taste, and garnish with fresh basil.
Serve warm and enjoy!
