Cranberry & Goat Cheese Chicken Meatballs with Lemon Garlic Chickpeas

Recipes:

1 can (15 oz) chickpeas, drained and rinsed
½ cup crumbled feta cheese
⅓ cup dried cranberries
¼ cup red onion, finely diced
¼ cup fresh parsley, chopped
2 tbsp toasted almonds or walnuts (optional)
For the Lemon Vinaigrette:
3 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp honey or maple syrup
½ tsp Dijon mustard
¼ tsp garlic powder
Salt and black pepper, to taste
Directions:
In a large bowl, combine the chickpeas, crumbled feta, dried cranberries, red onion, parsley, and toasted nuts (if using).
In a small jar or bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, garlic powder, salt, and black pepper until well combined.
Pour the lemon vinaigrette over the chickpea mixture and toss gently to coat.
Let the salad sit for 10-15 minutes to allow the flavors to meld.
Serve chilled or at room temperature. Enjoy!
