These Cranberry Bars are the perfect blend of tart and sweet, reminiscent of your favorite Christmas coffee shop treats. With a buttery shortbread base and a tangy cranberry filling, they are perfect not just for the holidays, but all year round. The cranberry filling adds a burst of flavor that’s beautifully complemented by the buttery crumble topping. Cranberry Filling:
8 oz fresh cranberries (2 ¼ cups)
2/3 cup sugar
3 tbsp water
Shortbread Bars:
2 cups flour
1/2 tsp kosher salt
1 cup butter (room temperature)
1/3 cup light brown sugar
1 tsp vanilla extract

Directions:
1. Preheat oven to 350°F. Cook cranberries with sugar and water until thickened, about 15 mins.
2. Mix flour and salt in a bowl. In another, beat butter, sugar, and vanilla. Combine with flour mixture.
3. Press 2/3 dough in an 8×8 pan, bake 17-18 mins. Spread cranberry filling, crumble remaining dough on top, and bake 25-30 mins.
