Recipes:
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon dried oregano
1/2 teaspoon paprika
1 can (14 oz) artichoke hearts, drained and quartered
1/2 cup cherry tomatoes, halved
1/2 cup chicken broth
1/4 cup heavy cream
1/4 cup grated Parmesan cheese
1 tablespoon lemon juice
1/4 teaspoon red pepper flakes (optional)
Fresh parsley, for garnish
Directions:
Heat the olive oil in a large skillet over medium-high heat. Add the chicken pieces, season with salt, pepper, oregano, and paprika, and cook until golden
brown and cooked through (about 5-6 minutes). Remove the chicken from the skillet and set aside.
In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant.
Add the artichoke hearts and cherry tomatoes, stirring occasionally for 2-3 minutes.
Pour in the chicken broth and let it simmer for 2 minutes. Stir in the heavy cream, Parmesan cheese, lemon juice, and red pepper flakes if using.
Return the cooked chicken to the skillet and stir everything together. Let it simmer for another 2-3 minutes until the sauce thickens slightly.
Garnish with fresh parsley and serve hot.
