1 tbsp olive oil
2-3 lb beef roast
1 large onion, sliced
2 tbsp tomato paste
4 cloves garlic, chopped
1 tsp thyme, chopped
1 tsp rosemary, chopped
1/2 tsp red pepper flakes (optional)
2 cups beef broth
1/4 cup balsamic vinegar
1/2 cup cranberry sauce (optional)
2 tbsp soy sauce
4 tbsp maple syrup
1 tbsp Worcestershire sauce
1 cup cranberries
1 lb carrots, peeled & sliced
Directions:
1. Heat oil, brown beef on all sides.
2. Cook onion until tender, add tomato paste, garlic, thyme, rosemary, & red pepper.
3. Mix in broth, vinegar, cranberry sauce, soy sauce, maple syrup, Worcestershire, carrots, & cranberries.
4. Braise at 275F for 3-4 hours or slow cook on low for 8-10 hours.
