Classic Spaghetti Bolognese

Ingredients:
For the Sauce:

2 tbsp olive oil

1 onion, finely chopped

2 garlic cloves, minced

1 carrot, finely diced

1 celery stalk, finely diced

1 lb ground beef (or a mix of beef and pork)

1/2 cup dry red wine

1 can (14 oz) crushed tomatoes

2 tbsp tomato paste

1/2 cup beef stock

1 tsp dried oregano

1 tsp dried basil

Salt and black pepper to taste

For the Pasta:

12 oz spaghetti

Water and salt for boiling

For Garnish:

Fresh parsley, chopped

Grated Parmesan cheese

Instructions:
Prepare the Sauce Base:

Heat olive oil in a large skillet over medium heat.
Sauté onion, garlic, carrot, and celery until softened, about 5 minutes.
Cook the Meat:

Add ground beef to the skillet. Cook until browned, breaking it up into small pieces as it cooks.
Deglaze with Wine:

Pour in the red wine and let it simmer until reduced by half.
Build the Sauce:

Stir in crushed tomatoes, tomato paste, beef stock, oregano, and basil.
Season with salt and pepper. Simmer on low heat for 30–40 minutes, stirring occasionally.
Cook the Spaghetti:

In a large pot, boil salted water and cook spaghetti according to package instructions. Drain and set aside.
Combine and Serve:

Toss the cooked spaghetti with the Bolognese sauce until well coated.
Serve with freshly chopped parsley and grated Parmesan cheese on top.
