Classic Shepherd’s Pie with a Twist
Ingredients
1 lb ground beef or lamb
1 medium onion, diced
2 cloves garlic, minced
1 cup mixed vegetables (peas, carrots, corn)
2 tbsp tomato paste
1 tsp Worcestershire sauce
1 tsp dried thyme
½ tsp paprika
Salt and pepper, to taste
2 cups mashed potatoes (freshly made or leftovers)
½ cup shredded cheddar cheese (optional, for topping)
Directions
Cook the Filling:
In a skillet, sauté onions and garlic until soft. Add ground beef or lamb and cook until browned.
Season and Simmer:
Stir in tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix well, then add the vegetables and cook for 3-4 minutes.
Layer It Up:
Transfer the meat mixture to a baking dish. Spread mashed potatoes evenly over the top.
Optional Topping:
Sprinkle shredded cheddar cheese on top for extra flavor.
Bake:
Bake in a preheated oven at 375°F (190°C) for 20-25 minutes, or until the top is golden and bubbly.
Garnish and Serve:
Garnish with fresh herbs or microgreens. Serve warm and enjoy!
