Classic Fruit and Nut Cake Recipe

Ingredients:

1 ½ cups mixed dried fruits (raisins, apricots, cranberries)

1 cup mixed nuts (almonds, walnuts, pecans)

1 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp cinnamon powder

½ cup unsalted butter, softened

¾ cup brown sugar

2 large eggs

½ cup orange juice

1 tsp vanilla extract

Instructions:
Preheat your oven to 160°C (320°F). Line a loaf pan with parchment paper.
Soak the dried fruits in orange juice for 15 minutes.
Cream the butter and sugar until light and fluffy. Add eggs one at a time, beating well. Stir in vanilla.
Sift together flour, baking powder, and cinnamon. Gradually fold into the butter mixture.
Drain the soaked fruits and combine with nuts. Gently fold into the batter.
Pour the batter into the prepared pan, smooth the top, and decorate with additional fruits and nuts.
Bake for 60-70 minutes or until a skewer comes out clean. Cool completely before slicing.
