Classic Chicken Noodle Soup
Ingredients
1 tbsp olive oil
1 medium onion, diced
2 garlic cloves, minced
2 medium carrots, sliced
2 celery stalks, diced
8 cups chicken broth
2 cups cooked shredded chicken
1 1/2 cups egg noodles or rotini pasta
1 tsp dried thyme
1 tsp dried parsley
Salt and pepper to taste
Fresh dill for garnish (optional)
Directions
Heat olive oil in a large pot over medium heat. Add diced onion, garlic, carrots, and celery. Sauté for 5 minutes until softened.
Stir in thyme, parsley, salt, and pepper. Pour in chicken broth and bring to a gentle boil.
Add the noodles to the pot and cook for 8-10 minutes until tender.
Stir in the shredded chicken and let simmer for another 5 minutes to heat through.
Taste and adjust seasoning if needed. Garnish with fresh dill before serving.
