Classic Beef Stew

Ingredients:

1.5 lbs beef chuck, cut into cubes

3 potatoes, diced

3 carrots, sliced

2 cloves garlic, minced

1 onion, chopped

3 cups beef broth

2 tbsp tomato paste

2 tbsp olive oil

1 tsp dried thyme

1 tsp rosemary

Salt and pepper to taste

Fresh parsley for garnish

Instructions:

1. Sear the Beef
:

Heat olive oil in a large pot over medium-high heat. Season beef cubes with salt and pepper, then sear until browned on all sides. Remove and set aside.

2. Sauté the Veggies
:

In the same pot, sauté the onion, garlic, carrots, and potatoes for 3-4 minutes.

3. Add Tomato Paste and Broth
:

Stir in tomato paste and cook for 1 minute. Add the seared beef back to the pot and pour in beef broth.

4. Season and Simmer
:

Add thyme and rosemary. Bring to a boil, then reduce heat to low, cover, and let simmer for 1.5-2 hours or until the beef is tender. Stir occasionally.

5. Adjust Seasoning
:

Taste and adjust salt and pepper as needed.

6. Serve and Garnish
:

Garnish with fresh parsley and serve hot with crusty bread or rice.

Tip: For added depth of flavor, deglaze the pot with a splash of red wine before adding the broth.
