Cinnamon Swirl Cheesecake

Ingredients:

For the Crust:

1 1/2 cups (150g) graham cracker crumbs

1/4 cup (50g) sugar

1/2 cup (115g) melted butter

For the Filling:

3 (8oz/225g each) packages of cream cheese, softened

1 cup (200g) granulated sugar

3 large eggs

1 tsp vanilla extract

For the Cinnamon Swirl:

1/4 cup (50g) brown sugar

1 tsp ground cinnamon

2 tbsp melted butter

Instructions:

1. Prepare the Crust:
In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a springform pan. Chill while preparing the filling.

2. Make the Filling:
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.

3. Cinnamon Swirl:
In a small bowl, mix brown sugar, cinnamon, and melted butter until combined.

4. Assemble the Cheesecake:
Pour half of the cream cheese mixture over the crust. Drizzle half of the cinnamon mixture on top and swirl with a knife. Repeat with the remaining batter and cinnamon mixture.

5. Bake:
Preheat oven to 325°F (165°C). Bake for 50-60 minutes or until the center is set. Let cool completely, then refrigerate for at least 4 hours or overnight.

6. Serve:
Slice, serve, and enjoy the rich, cinnamon-infused treat!
