Cilantro Lime Rice with Black Beans

Ingredients

1 cup long-grain white or brown rice
2 cups water or chicken broth
1 tbsp olive oil or butter
1 can (15 oz) black beans, rinsed and drained
2 garlic cloves, minced
Juice of 2 limes
Zest of 1 lime
⅓ cup fresh cilantro, chopped
1 green onion, sliced (optional)
Salt and pepper to taste
Directions

Cook the rice: In a medium pot, combine rice, water (or broth), olive oil, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer until rice is tender (about 15 minutes for white rice or 40 minutes for brown rice). Fluff with a fork.

Sauté garlic: In a skillet over medium heat, sauté minced garlic in a little olive oil for 1 minute until fragrant.

Add black beans: Stir in the black beans and cook until warmed through, about 3-4 minutes. Season with salt and pepper.

Mix the rice and beans: Combine the cooked rice with the black beans. Stir in lime juice, lime zest, and cilantro. Adjust salt and pepper to taste.

Serve: Garnish with extra cilantro and green onion, and serve warm. Perfect as a side dish or a base for burrito bowls!
