8.8 oz (250 g) pasta
1 tbsp olive oil
½ lb (250 g) chorizo sausage, sliced
1 large shallot, finely chopped
1 red pointed pepper, sliced
2 garlic cloves, chopped
½ lb (225 g) halloumi, cubed
½ tbsp dried oregano
2 tsp smoked paprika
1 cup (200 ml) tomato sauce
2 tbsp fresh parsley, chopped
Salt & black pepper to taste

Directions:
1. Cook pasta al dente. Reserve 1 cup pasta water.
2. Cook chorizo in oil, add shallot, pepper & garlic.
3. Add halloumi, oregano, paprika, & tomato sauce.
4. Stir in pasta water, combine pasta, garnish with parsley.
