Chorizo and Halloumi Pasta
This dish brings a burst of Mediterranean flavor straight to your dinner table. The smoky chorizo pairs perfectly with salty halloumi, all coated in a rich tomato sauce. It’s a simple yet hearty pasta that’s ready in 30 minutes – perfect for those busy weeknights when comfort food is all you need. A fusion of flavors that’ll have you cozying up for seconds!
8.8 oz (250 g) pasta
1 tbsp olive oil
½ lb (250 g) chorizo sausage, sliced
1 large shallot, finely chopped
1 red pointed pepper, sliced
2 large garlic cloves, minced
½ lb (225 g) halloumi cheese, cubed
½ tbsp dried oregano
2 tsp smoked paprika
1 cup (200 ml) tomato sauce (passata)
2 tbsp fresh parsley, chopped
Salt & pepper to taste
Directions:
1. Cook pasta al dente. Reserve pasta water.
2. Cook chorizo in olive oil. Add shallot & pepper, cook for 3 mins.
3. Stir in garlic, halloumi, oregano & paprika. Add tomato sauce & pasta water. Let simmer.
4. Mix in pasta, add parsley, adjust seasoning, serve.
