Chocolate Pecan Turtle Dream Cookies
Ingredients:
1 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar, packed
1 large egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
1 cup pecans, finely chopped
1/2 cup semi-sweet chocolate chips
1/2 cup caramel sauce
Whole pecan halves for garnish
Directions:
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Beat in the egg and vanilla extract until well combined.
Gradually add the flour and salt, mixing until just combined.
Roll dough into 1-inch balls and then roll each ball in the chopped pecans, pressing lightly to adhere.
Place balls on the prepared baking sheet and press an indentation into the center of each with your thumb.
Bake for 10-12 minutes or until the edges are lightly golden.
Remove from oven and immediately press the centers down again if they have puffed up.
Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Once cooled, fill each indentation with melted chocolate chips, then drizzle with caramel sauce, and top with a whole pecan half.
