Chocolate Haystack Cookies

Ingredients:

2 cups chow mein noodles
1 cup butterscotch chips
1 cup semi-sweet chocolate chips
1/2 cup creamy peanut butter
1 teaspoon vanilla extract
Pinch of salt
Directions:
In a microwave-safe bowl, melt the butterscotch chips, chocolate chips, and peanut butter together in 30-second intervals, stirring in between until smooth.
Add the vanilla extract and a pinch of salt to the melted mixture, stirring until well combined.
In a large bowl, pour the melted mixture over the chow mein noodles. Gently fold until the noodles are completely coated.
Using a spoon, drop clusters of the mixture onto a parchment-lined baking sheet.
Refrigerate the clusters for about 30 minutes or until set.
Once set, remove from the refrigerator and serve immediately or store in an airtight container.
