Recipes:

For the Chicken:
2 boneless, skinless chicken breasts
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
2 tablespoons butter
3 cloves garlic, minced
1/2 cup chicken broth
1/2 cup fresh cranberries
1 tablespoon honey
1 teaspoon balsamic vinegar
1 teaspoon fresh thyme
For the Creamy Spinach Orzo:
1 cup orzo pasta
1 tablespoon butter
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
1 cup fresh spinach, chopped
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions:
Season the chicken breasts with salt, pepper, and paprika.
In a large skillet, melt the butter over medium heat. Add the chicken and cook for 4-5 minutes per side until golden brown.
Add the minced garlic and cook for 30 seconds until fragrant. Pour in the chicken broth, cranberries, honey, balsamic vinegar, and thyme.
Simmer for 5-7 minutes until the cranberries burst and the sauce thickens slightly. Remove the chicken and set aside.
Meanwhile, cook the orzo according to package instructions. Drain and return to the pot.
Stir in butter, heavy cream, Parmesan, spinach, salt, and pepper. Cook for 2 minutes until the spinach is wilted and the orzo is creamy.
Serve the chicken over the creamy spinach orzo, drizzling extra cranberry sauce over the top.
