Chocolate Caramel Cheesecake Bars
Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 tbsp sugar
For the Chocolate Layer:
1 cup semi-sweet chocolate chips
1/4 cup heavy cream
For the Cheesecake Layer:
16 oz cream cheese (softened)
1/2 cup sugar
1 tsp vanilla extract
2 eggs
For the Caramel Layer:
1 cup caramel sauce
1/4 tsp sea salt (optional)
For the Chocolate Ganache:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
Directions
Prepare the crust: Preheat oven to 325°F (163°C). Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a lined 9×9-inch baking dish. Bake for 10 minutes and let cool.
Make the chocolate layer: Melt chocolate chips with heavy cream until smooth. Spread over the crust and chill for 15 minutes.
Prepare the cheesecake layer: Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well. Pour over the chilled chocolate layer and bake for 30-35 minutes, or until the center is set. Cool completely.
Add the caramel layer: Spread caramel sauce over the cooled cheesecake layer. Sprinkle with sea salt if desired. Chill for 10 minutes.
Top with ganache: Melt chocolate chips with heavy cream, stirring until glossy. Pour over the caramel layer and spread evenly. Chill for at least 2 hours or until firm.
Serve: Slice into bars, drizzle with extra caramel, and enjoy the decadence!
