Chocolate Caramel Cheesecake
Ingredients:
For the Crust:
2 cups chocolate cookie crumbs
1/4 cup unsalted butter, melted
For the Cheesecake Filling:
500g cream cheese, softened
1 cup sugar
1 tsp vanilla extract
2 large eggs
1/2 cup sour cream
1/4 cup heavy cream
For the Chocolate Ganache:
1 cup dark chocolate, chopped
1/2 cup heavy cream
For the Topping:
Caramel sauce drizzle
Chocolate chunks or candies

Instructions:
Prepare the Crust
Preheat your oven to 160°C (325°F).
Mix the chocolate cookie crumbs with melted butter.
Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes, then let cool.
Make the Cheesecake Filling
Beat cream cheese and sugar until smooth.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla, sour cream, and heavy cream.
Pour the mixture over the crust.
Bake the Cheesecake
Place the springform pan in a water bath and bake for 45-50 minutes, or until the center is just set.
Let cool at room temperature, then refrigerate for at least 4 hours or overnight.
Prepare the Ganache
Heat heavy cream until it begins to simmer, then pour over chopped chocolate. Stir until smooth.
Assemble the Cheesecake
Pour the ganache over the chilled cheesecake, spreading evenly.
Drizzle with caramel sauce and top with chocolate chunks.
