Perfect for summer evenings when you crave something light yet satisfying, these noodles are full of spice, sweetness, and a crunch from fresh herbs, peanuts, and sesame seeds.

8 oz rice noodles or long pasta
1/2 cup peanut butter
1/3 cup tamari/soy sauce
2 tbsp honey
1/4 cup Thai red curry paste
1 tbsp grated ginger
2 carrots, shredded
2 bell peppers, sliced
1/4 cup + 1 tbsp sesame oil
8 oz halloumi, cubed
6 cloves garlic, chopped
1/2 cup basil, chopped
1/2 cup cilantro, chopped
2 green onions, sliced
3 tbsp toasted sesame seeds
3 tbsp peanuts
2 tbsp lime juice

Directions:
1. Boil noodles as per package. Add to a bowl with carrots and peppers.
2. Blend peanut butter, soy sauce, honey, curry paste, ginger, and water. 3. Toss with noodles.
4. Cook halloumi in sesame oil until golden. Set aside.
5. Crisp garlic in remaining sesame oil, add halloumi, herbs, peanuts, and lime juice.
6. Serve noodles topped with halloumi.
