Description
1 lb pasta (penne, spaghetti, or your favorite)
2 tbsp olive oil
2 cloves garlic, minced
1 medium onion, diced
1 cup frozen peas
1 can (14 oz) diced tomatoes
½ cup vegetable broth
1 tsp dried oregano
Salt and black pepper to taste
¼ cup grated parmesan cheese
¼ cup fresh basil or parsley, chopped (for garnish)
Directions:
Cook the pasta according to package instructions until al dente, then drain, reserving 1 cup of pasta water.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and diced onion, sautéing until the onion becomes soft and translucent, about
3-4 minutes.
Stir in the frozen peas and cook for 2-3 minutes until they are heated through.
Add the diced tomatoes, vegetable broth, oregano, salt, and black pepper. Stir and let it simmer for 5-7 minutes to allow the flavors to meld.
Add the cooked pasta to the skillet, tossing it in the sauce. If needed, add a bit of the reserved pasta water to help the sauce coat the pasta evenly.
Sprinkle with grated parmesan cheese and fresh basil or parsley. Serve warm.
