Chicken, Spinach, and Bacon Pasta
This creamy pasta dish features pan-seared chicken, crispy bacon, fresh spinach, and cherry tomatoes all tossed together in a creamy sauce. It’s a comforting and flavorful dish that’s perfect for any occasion!
Ingredients
For the Chicken:
2 boneless, skinless chicken breasts
1 tbsp olive oil
Salt and pepper to taste
1 tsp garlic powder
1 tsp paprika
For the Pasta:
8 oz penne pasta
2 tbsp olive oil
2 cloves garlic, minced
1 cup cherry tomatoes, halved
3 cups fresh spinach
4 slices bacon, cooked and crumbled
1 cup heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne pasta according to the package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
Prepare the Chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and paprika. Cook the chicken for about 6-7 minutes per side, or until golden brown and cooked through. Remove from the skillet and let rest before slicing.
Cook the Bacon: In the same skillet, cook the bacon until crispy. Remove the bacon from the pan and crumble it into small pieces. Set aside.
Make the Creamy Sauce: In the same skillet, add olive oil and sauté the minced garlic for 1-2 minutes until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes, until softened. Stir in the spinach and cook until wilted. Add the heavy cream, Parmesan cheese, and reserved pasta water. Stir until the sauce is creamy and thickened. Season with salt and pepper to taste.
Combine the Pasta and Sauce: Add the cooked pasta to the skillet and toss to coat in the creamy sauce. Stir in the crumbled bacon and sliced chicken.
Serve: Plate the pasta and garnish with additional Parmesan cheese and fresh herbs if desired.
