1 lb boneless skinless chicken breast
1 tsp kosher salt, divided
½ tsp black pepper
3 tbsp olive oil
8 oz dried penne
4 cups chicken stock
½ cup basil pesto
½ cup heavy cream
¼ cup grated parmesan
¼ cup sundried tomatoes
½ cup cherry tomatoes (optional)
Directions:
1. Cut and season chicken, then cook until browned.
2. Boil pasta in chicken stock until tender.
3. Stir in pesto, cream, cheese, and tomatoes. Add chicken back in.
