Chicken Boursin Cheese Pasta
Ingredients
2 large chicken breasts (cubed)
8 oz penne pasta
1 tablespoon olive oil
2 cloves garlic (minced)
1 cup mushrooms (sliced)
1 package (5.2 oz) Boursin Garlic & Herb Cheese
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley (chopped, for garnish)
Directions
Cook the penne pasta according to package instructions. Drain and set aside.
Heat olive oil in a large skillet over medium-high heat.
Season the chicken with salt and pepper, then cook for 6-8 minutes until golden and cooked through. Remove and set aside.
Add sliced mushrooms and garlic to the skillet, cooking for 3-4 minutes until softened.
Stir in the Boursin cheese and heavy cream, cooking until melted and creamy.
Add cooked pasta and chicken back into the skillet, tossing to coat in the sauce.
Sprinkle Parmesan cheese over the top and stir well.
Garnish with fresh parsley and serve hot.
