Cherry Pistachio Cheesecake

Ingredients:

For the Crust:

1 1/2 cups graham cracker crumbs

1/4 cup melted butter

2 tbsp sugar

For the Cheesecake Filling:

500g cream cheese, softened

1 cup heavy cream

3/4 cup powdered sugar

1 tsp vanilla extract

For the Cherry Layer:

2 cups fresh cherries, pitted and halved

1/4 cup sugar

2 tsp cornstarch dissolved in 2 tbsp water

For Garnish:

Whipped cream

Pistachios, chopped

Whole cherries

Instructions:

Prepare the Crust:
Mix graham cracker crumbs, sugar, and melted butter. Press into the base of a springform pan. Chill in the fridge for 20 minutes.

Make the Cheesecake Filling:
Beat cream cheese, sugar, and vanilla until smooth. Gradually add heavy cream, beating until fluffy. Spread over the crust and refrigerate for at least 4 hours.

Cook the Cherry Layer:
In a saucepan, combine cherries and sugar. Cook on medium heat until cherries release their juices. Stir in cornstarch mixture and cook until thickened. Cool completely. Spread over the cheesecake.

Decorate:
Top with whipped cream, pistachios, and whole cherries. Serve chilled.
