Cherry Cheesecake Bars
Ingredients:
For the crust:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
2 tbsp sugar
For the cheesecake filling:
450 g (16 oz) cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1 cup heavy whipping cream
For the cherry topping:
1 can (540 ml) cherry pie filling
Instructions:
1. Prepare the crust:
Preheat the oven to 175°C (350°F). Line an 8×8-inch baking pan with parchment paper.
In a bowl, combine graham cracker crumbs, melted butter, and sugar. Mix until evenly coated.
Press the mixture firmly into the prepared pan. Bake for 8-10 minutes, then let cool completely.
2. Make the cheesecake filling:
In a large bowl, beat the cream cheese with powdered sugar and vanilla extract until smooth.
In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
3. Assemble the bars:
Spread the cheesecake filling evenly over the cooled crust.
Spoon the cherry pie filling over the cheesecake layer, spreading it evenly.
4. Chill and serve:
Refrigerate for at least 4 hours or until the cheesecake is set.
Slice into bars and serve cold. Enjoy!
