Cheesy Stuffed Bell Peppers
Ingredients:
4 large bell peppers (red, yellow, or orange)
1 cup ricotta cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 egg
1/4 cup chopped fresh parsley
1/2 tsp garlic powder
1/2 tsp Italian seasoning
Salt and pepper to taste
2 tbsp olive oil
Instructions:
Prep the Bell Peppers
Cut the bell peppers in half lengthwise and remove the seeds and membranes. Lightly brush the outside with olive oil and place them on a baking dish.
Mix the Cheese Filling
In a bowl, combine ricotta cheese, mozzarella, Parmesan, egg, parsley, garlic powder, Italian seasoning, salt, and pepper. Mix well until creamy and smooth.
Stuff the Peppers
Spoon the cheese mixture generously into each pepper half, filling them to the top.
Bake to Perfection
Preheat your oven to 375°F (190°C). Bake the peppers for 25-30 minutes, or until the cheese is bubbly and golden on top.
Garnish and Serve
Sprinkle with extra parsley for a fresh touch and serve warm. Perfect as a side dish or a light main course!
