Cheesy Steak Fajita Rolls Recipe
Ingredients
For the Filling:
1 lb (450g) steak (flank, sirloin, or ribeye), thinly sliced
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 medium onion, thinly sliced
2 tablespoons olive oil
2 teaspoons fajita seasoning (or mix of chili powder, cumin, paprika, garlic powder, and oregano)
1/2 cup (100g) shredded cheddar cheese
1/2 cup (100g) shredded Monterey Jack cheese
For the Rolls:
1 package of large tortillas (flour or corn)
2 tablespoons butter, melted
1 tablespoon fresh cilantro, chopped (optional garnish)
Instructions
Cook the Filling:
Heat the olive oil in a large skillet over medium-high heat.
Add the steak slices, season with fajita seasoning, and cook for 3-4 minutes until browned. Remove from the skillet and set aside.
In the same skillet, sauté the bell peppers and onions until tender, about 5-7 minutes. Mix the steak back in and remove from heat.
Assemble the Rolls:
Lay a tortilla flat on a cutting board.
Sprinkle a thin layer of cheddar and Monterey Jack cheese over the tortilla.
Spread a generous amount of the steak and pepper mixture on top.
Roll the tortilla tightly into a log. Repeat for all tortillas.
Slice and Bake:
Preheat the oven to 375°F (190°C).
Slice each rolled tortilla into 1.5-inch pieces. Arrange the rolls in a greased baking dish or on a lined baking sheet.
Brush the tops with melted butter and sprinkle extra cheese on top if desired.
Bake:
Bake for 15-20 minutes or until the cheese is bubbly and the tops are golden brown.
Serve:
Garnish with chopped cilantro and serve warm with salsa, guacamole, or sour cream for dipping.
Storage Tips:
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in a preheated oven or air fryer for a crisp finish.
