Cheesy Skillet Chicken and Mushrooms
Ingredients
4 boneless, skinless chicken breasts
2 cups sliced mushrooms
2 tbsp olive oil
3 cloves garlic, minced
1 cup heavy cream
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions
Heat olive oil in a large skillet over medium heat. Season chicken breasts with salt and pepper, then cook for 4-5 minutes per side until golden brown. Remove and set aside.
Add mushrooms to the skillet and sauté for 4-5 minutes until tender. Stir in garlic and cook for 1 minute.
Pour in heavy cream and add Italian seasoning. Let the sauce simmer for 2-3 minutes, stirring occasionally.
Return the chicken breasts to the skillet, spooning the sauce over them.
Sprinkle mozzarella and Parmesan cheese evenly over the chicken and mushrooms.
Cover and cook for 5-7 minutes on low heat, or until the cheese is melted and bubbly.
Garnish with fresh parsley and serve hot.
