Cheesy Roasted Vegetable Casserole
Ingredients:
4 cups potatoes, diced
2 cups carrots, sliced
1 cup zucchini, diced
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper to taste
1 1/2 cups shredded mozzarella cheese
1/4 cup fresh parsley, chopped
Instructions:
1. Preheat the oven to 400°F (200°C) and grease a baking dish.
2. In a large bowl, toss potatoes, carrots, and zucchini with olive oil, garlic powder, paprika, salt, and pepper.
3. Spread the vegetables evenly in the baking dish and roast for 25-30 minutes until tender.
4. Remove the dish from the oven and sprinkle mozzarella cheese evenly over the vegetables. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
5. Garnish with fresh parsley before serving.
