Cheesy Roasted Potatoes and Sausage

Ingredients

1.5 lbs baby potatoes, halved or quartered
12 oz smoked sausage, sliced into rounds
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and pepper, to taste
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
2 tbsp fresh chives, chopped
1/2 tsp red pepper flakes (optional)
Directions

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the potatoes and sausage with olive oil, garlic powder, paprika, salt, and pepper. Mix well to coat.
Spread the mixture evenly on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until potatoes are golden and tender.
Remove from the oven and sprinkle cheddar and mozzarella cheese evenly over the top. Return to the oven for 5-7 minutes, or until the cheese is melted and bubbly.
Garnish with fresh chives and red pepper flakes (if desired). Serve hot and enjoy!
