Cheesy Mac & Cheese Bites
Ingredients:
2 cups prepared mac and cheese
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup all-purpose flour
2 large eggs (beaten)
1 1/2 cups panko breadcrumbs
1 tsp garlic powder
1/2 tsp smoked paprika
Salt and pepper to taste
Oil for frying (vegetable or canola)
Instructions:
1. Prepare the Mac & Cheese Mixture:
Mix the prepared mac and cheese with shredded cheddar and mozzarella cheese until evenly combined.
Scoop small portions (about 1 tablespoon) and roll them into balls. Place them on a tray lined with parchment paper.
Freeze the mac and cheese balls for 20–30 minutes to help them hold their shape.
2. Set Up the Breading Station:
Place the flour in a shallow bowl.
In another bowl, beat the eggs.
In a third bowl, mix panko breadcrumbs with garlic powder, smoked paprika, salt, and pepper.
3. Bread the Mac & Cheese Bites:
Roll each frozen ball in the flour, then dip it into the beaten egg, and finally coat it thoroughly with the breadcrumb mixture.
Repeat until all the mac and cheese balls are coated.
4. Fry the Bites:
Heat about 2 inches of oil in a deep skillet or pot to 350°F (175°C).
Fry the mac and cheese bites in batches, turning occasionally, for 2–3 minutes or until golden brown and crispy.
Remove and drain on a plate lined with paper towels.
5. Serve:
Serve hot with your favorite dipping sauce like marinara, ranch, or spicy aioli.
