Cheesy Chicken Enchiladas
Ingredients:
8 small tortillas
2 cups cooked shredded chicken
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
2 cups enchilada sauce
1/2 cup chopped red onion
Fresh cilantro for garnish
Instructions:
1. Preheat your oven to 180°C (350°F).
2. In each tortilla, place shredded chicken and a mix of cheeses, then roll tightly.
3. Arrange the rolled tortillas in a baking dish.
4. Pour enchilada sauce over the tortillas and top with remaining cheese.
5. Bake for 20-25 minutes until bubbly and golden.
6. Garnish with chopped onions and fresh cilantro. Serve warm and enjoy!
