Cheesy Chicken and Spinach Bake

Ingredients

4 boneless, skinless chicken breasts
2 tbsp olive oil
3 cups fresh spinach (or 1 cup frozen, thawed and drained)
1 cup sliced mushrooms
1/2 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 clove garlic, minced
1/2 tsp dried thyme
Salt and pepper to taste
Directions

Preheat oven: Preheat your oven to 375°F (190°C).

Cook the spinach and mushrooms: Heat olive oil in a skillet over medium heat. Add garlic, spinach, and mushrooms, cooking until softened (about 3-4 minutes). Season with salt and pepper.

Sear the chicken: In the same skillet, season the chicken breasts with salt, pepper, and thyme. Sear for 2-3 minutes on each side until golden brown (chicken will finish cooking in the oven).

Prepare the sauce: In a small bowl, whisk together heavy cream and chicken broth.

Assemble the bake: Place the sautéed spinach and mushrooms at the bottom of a greased baking dish. Add the seared chicken on top. Pour the cream sauce over everything. Sprinkle mozzarella and Parmesan cheese evenly on top.

Bake: Bake for 25-30 minutes, or until the chicken is fully cooked (internal temperature of 165°F/74°C) and the cheese is bubbly and golden.

Serve: Let rest for 5 minutes before serving. Pair with a side of rice, pasta, or crusty bread.
