Cheesy Chicken and Broccoli Pasta Bake
Ingredients
12 oz penne pasta
2 cups cooked chicken breast, shredded
2 cups broccoli florets
3 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
2 cups milk
2 tbsp butter
2 tbsp all-purpose flour
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp paprika
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
Directions
Cook the pasta and broccoli:
Boil the penne in salted water according to package directions. Add broccoli florets in the last 2 minutes of cooking. Drain and set aside.
Make the cheese sauce:
In a saucepan, melt butter over medium heat. Stir in the flour and cook for 1 minute. Slowly whisk in milk, stirring until thickened.
Season and add cheese:
Stir in garlic powder, onion powder, paprika, salt, and pepper. Add 2 1/2 cups of cheddar cheese and stir until melted and smooth.
Assemble the bake:
In a large mixing bowl, combine cooked pasta, broccoli, shredded chicken, and cheese sauce. Mix well.
Bake to perfection:
Transfer to a greased 9×13-inch baking dish. Top with mozzarella cheese and remaining cheddar cheese. Bake at 375°F (190°C) for 20-25 minutes or until bubbly and golden.
Garnish and serve:
Sprinkle with fresh parsley if desired, and serve warm.
