Cheesy Broccoli Bites

Ingredients

2 cups fresh broccoli, finely chopped
1 cup shredded cheddar cheese
½ cup breadcrumbs
¼ cup grated Parmesan cheese
1 egg, lightly beaten
½ tsp garlic powder
½ tsp onion powder
Salt & pepper, to taste
1 cup panko breadcrumbs (for coating)
Olive oil spray
Directions

Preheat Oven
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or grease it lightly with olive oil spray.

Blanch the Broccoli
Bring a pot of water to a boil and blanch the chopped broccoli for 2 minutes. Drain and pat dry with a paper towel.

Mix the Ingredients
In a large bowl, combine broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Shape into Bites
Scoop out a small amount of the mixture (about 1 tbsp) and roll it into a ball. Repeat until all the mixture is used.

Coat with Panko
Roll each ball in panko breadcrumbs to coat. Place the bites on the prepared baking sheet.

Bake
Lightly spray the bites with olive oil. Bake for 18-20 minutes, or until golden and crispy.

Serve
Serve warm with your favorite dipping sauce, like ranch, marinara, or cheese sauce.
