Cheesy Beef Tamale Pie Recipe
Ingredients:
1 lb ground beef
1 small onion, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes (drained)
1 can (8 oz) tomato sauce
1 cup frozen corn
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
Salt and pepper to taste
1 box cornbread mix (plus ingredients on the box)
1 cup shredded cheddar cheese
Fresh parsley or cilantro for garnish (optional)
Instructions:
Preheat oven to 375°F (190°C).
In a skillet over medium heat, cook ground beef with diced onion and garlic until beef is browned and onion is soft. Drain any excess fat.
Add diced tomatoes, tomato sauce, corn, chili powder, cumin, paprika, salt, and pepper. Simmer for 5 minutes.
Spread the beef mixture evenly in a greased baking dish.
Prepare the cornbread mix according to the package instructions. Pour the batter over the beef mixture and spread evenly.
Sprinkle shredded cheddar cheese on top.
Bake for 25–30 minutes or until the cornbread is golden and cooked through.
Garnish with fresh parsley or cilantro and serve hot!
