Ingredients

1 lb large shrimp, peeled and deveined

2 cups fresh spinach, chopped

2 tablespoons olive oil
2 tablespoons unsalted butter

2 cloves garlic, minced

1 cup heavy cream

½ cup grated Parmesan cheese

1 cup shredded mozzarella cheese

½ teaspoon Italian seasoning

Salt and black pepper to taste

Instructions

Preheat the Oven:
Preheat your oven to 375°F (190°C). Grease a medium-sized casserole dish and set aside.

Sauté the Spinach:
In a skillet, heat olive oil over medium heat. Add the chopped spinach and sauté until wilted, about 2-3 minutes. Remove from the skillet and set aside.

Cook the Shrimp:
In the same skillet, melt butter and add minced garlic. Sauté until fragrant, then add shrimp. Cook for 2-3 minutes on each side until pink and slightly opaque. Remove from the skillet.

Make the Creamy Sauce:
Add heavy cream to the skillet and bring to a simmer. Stir in Parmesan cheese and Italian seasoning. Cook until slightly thickened, about 2-3 minutes. Season with salt and pepper.

Assemble the Casserole:
Spread the sautéed spinach evenly on the bottom of the casserole dish. Arrange the cooked shrimp on top. Pour the creamy sauce over the shrimp and spinach. Sprinkle shredded mozzarella cheese evenly over the top.

Bake:
Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly. For a golden finish, broil for 1-2 minutes.

Garnish and Serve:
Remove from the oven and let cool for 5 minutes. Garnish with fresh parsley or chili flakes for extra flavor. Serve hot with crusty bread or over pasta for a complete meal.
