Recipes:

2 boneless, skinless chicken breasts
Salt and black pepper, to taste
1 tbsp olive oil
½ cup fresh or frozen cranberries
¼ cup pure maple syrup
¼ cup freshly squeezed orange juice
1 tsp orange zest
½ tsp ground cinnamon
½ tsp dried thyme (or 1 tsp fresh thyme)
1 clove garlic, minced
1 tbsp unsalted butter
Directions:
Season the chicken breasts with salt and black pepper.
Heat olive oil in a skillet over medium heat. Sear the chicken for 4-5 minutes per side until golden brown, then remove from the skillet and set aside.
In the same skillet, add the cranberries, maple syrup, orange juice, orange zest, cinnamon, thyme, and garlic. Stir and cook for 2-3 minutes until the
cranberries begin to burst.
Return the chicken to the skillet, spoon the sauce over the top, and reduce heat to low. Cover and simmer for 10 minutes until the chicken is fully cooked.
Stir in the butter for a smooth, glossy sauce.
Serve warm, spooning extra sauce over the chicken. Enjoy!
