Caramel Chocolate Chip Icebox Cake
Ingredients:
2 cups crushed graham crackers
1/2 cup melted butter
2 cups heavy cream (cold)
1/2 cup powdered sugar
1 tsp vanilla extract
1 1/2 cups caramel sauce
1 cup chocolate chips
1 1/2 cups cream cheese (softened)
Instructions:
1. Base Layer: Combine graham cracker crumbs with melted butter. Press firmly into the bottom of an 8×8 baking dish. Chill in the refrigerator for 15 minutes.
2. Whipped Cream: Beat cold heavy cream with powdered sugar and vanilla until stiff peaks form. Set aside.
3. Cheesecake Layer: Beat softened cream cheese until smooth. Gently fold in half of the whipped cream. Spread this mixture evenly over the crust.
4. Caramel Drizzle: Spread half of the caramel sauce over the cream cheese layer. Sprinkle half of the chocolate chips on top.
5. Final Layers: Add the remaining whipped cream, drizzle with remaining caramel sauce, and sprinkle with the rest of the chocolate chips.
6. Chill: Refrigerate for at least 4 hours or overnight to set. Slice and serve.
