Ingredients:
Crust:
2 cups graham crackers, finely crumbled
2 tbsp butter, melted
Filling:
1 ½ cups apple pie filling
16 oz cream cheese, room temperature
½ cup sugar
¼ tsp vanilla extract
2 large eggs, room temperature
Topping:
¼ cup caramel topping
½ cup apple pie filling
Instructions:
Preheat the oven to 350°F (175°C).
Make the crust: In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture evenly into the bottom of a 7-inch springform pan.
Layer the apple filling: Spread the apple pie filling evenly over the crust.
Prepare the cheesecake filling: In a large bowl, beat the cream cheese until fluffy. Add the sugar, vanilla, and eggs, then mix until smooth. Pour this over the apple pie layer.
Bake: Place the cheesecake in the oven and bake for 50-55 minutes, or until the center is set. Cool to room temperature.
Top the cheesecake: Heat the remaining apple pie filling and caramel sauce in a small saucepan for 1 minute. Spread this mixture evenly over the cooled cheesecake.
