1 can (15 oz) chickpeas, drained and rinsed
½ cup feta cheese, crumbled
¼ cup dried cranberries
1 tbsp olive oil
1 tbsp fresh lemon juice
1 tsp honey or maple syrup
1 tsp Dijon mustard
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and black pepper to create the lemon vinaigrette.
In a large bowl, toss the chickpeas with the feta cheese and dried cranberries.
Drizzle the lemon vinaigrette over the chickpea mixture and toss to combine.
Garnish with freshly chopped parsley and serve.
