1 butternut squash, peeled and cubed
1 cup quinoa, rinsed
1 can (15 oz) chickpeas, drained and rinsed
1 can (15 oz) diced tomatoes
1 onion, chopped
2 carrots, chopped
4 cups vegetable broth
1 tsp ground cumin
1 tsp turmeric
1 tsp cinnamon
Salt and pepper to taste

Directions:
1. Peel and cube squash; chop onion and carrots.
2. Layer all ingredients in crockpot.
3. Cook on low for 5 hours.
4. Season with salt and pepper.
