1 tbsp olive oil
3 cups peeled, cubed butternut squash
1 medium yellow onion, diced
3 cloves garlic, minced
1/2 jalapeño, diced
1 tsp cumin
1 tsp chili powder
1 (15 oz) can black beans, rinsed
8 corn tortillas, cut into strips
1 (15 oz) can enchilada sauce
1 cup shredded cheese (divided)
Fresh cilantro & Greek yogurt for serving

Directions:
1. Cook onion, garlic, and jalapeño in a skillet until fragrant.
2. Add squash, cumin, chili powder, salt, and pepper; cook until tender.
3. Stir in black beans, tortilla strips, enchilada sauce, and cheese.
4. Broil with extra cheese until melted. Serve with cilantro & yogurt.
